Chef Jamie Gannon’s love of cooking began at age 15, and he went on to join the Royal Australian navy where he travelled the world aboard HMAS Brisbane and HMAS Melbourne cooking and learning the trade. His current roles are group executive chef for Laundy Hotels, head chef at Sydney’s Terminus Pyrmont Hotel, and he’s also a hospitality consultant. At Laundy Hotels Jamie looks after 20 plus venues and is also helping the group to navigate a massive restructure with a major focus on food.

Since joining Australian Venue Co, then Dixon Hospitality, in 2017 Kylie has created the Australian Venue Co brand and built the group’s industry-leading sales and marketing strategy for a portfolio of more than 160 venues across Australia and New Zealand. Kylie leads a sales & marketing department of 83 staff, which includes a number of specialised teams across digital marketing, brand & communications, events, activations, sales & marketing management. Kylie is a key strategic decision maker on the executive team. She plays a leading role in the group’s acquisition and brownfield strategy and has also led the AVC COVID-19 Recovery Plan – a strategic playbook designed to proactively lead the group through an extended period of uncertainty and rapidly changing government restrictions and market conditions. This strategy resulted in the rapid recovery of the group’s 160+ venues. Within Australia, three of the five states are now achieving sales equal to or greater than pre-Covid results.

As General Manager, APAC for SevenRooms, Paul Hadida is responsible for expanding the company’s business and on-the-ground presence across the APAC region. As a senior leader with experience in SaaS and high-growth marketplaces, Paul has an impressive track record of scaling businesses across Australia as Vice President of Asia-Pacific (APAC) at Quandoo, and in various sales leadership roles at Catch Group. He also has more than 20 years of hospitality experience, including as an owner-operator.

Garie Dooley is a keynote speaker, author, coach, and facilitator who has supported teams globally and within Australia, from corporate boardrooms to elite sports teams. Over the last 15 years, Garie’s obsession with high-performance teams & leadership has helped teams move from Fake to Phenomenal, leaders shift from Salvager to Legend, and businesses become Iconic. Garie creates an environment with high levels of Trust and absolute clarity of Purpose, delivering sustainable and phenomenal success. In the hospitality space, Garie has worked with Merivale, Kickon Group, Sydney Collective, Redcape and Colonial Leisure Group.

Tobias started his career in beverages in Europe and some 25+ years’ later he has worked in several countries across the globe with a variety of global brands such as Grolsch, Rekorderlig, Jim Beam, Canadian Club and Coca-Cola. Tobias now heads up the Licensed channel at Coca-Cola Europacific Partners Australia, where his team sell and distribute a diverse portfolio of Spirit, RTD, Cider and Non-Alcoholic products to over 20,000 on- and off-premise venues. Throughout his career Tobias has successfully experienced a broad set of roles across sales, marketing and leadership which provides him with great knowledge, perspective and insight into the beverage and hospitality industry in Australia. Tobias works closely with Industry and customer partners on a daily basis and never knocks back the opportunity to ‘talk shop’ over a Makers Mark Ole Fashioned or a cold Coke!

Scott started in nightclubs as a teenager some 30 years ago, then spent 12 years in the UK helping Walkabouts grow from 5 to 50 venues. In 2009 he bought a share in his first venue and helped grow iconic brands such as Belles Hot Chicken, Mamasita and Welcome to Thornbury to a portfolio of 21 venues in 12 years with 100 Burgers Group. Now he is helping the highly ambitious Kickon Group grow their portfolio of seven venues in Victoria and Queensland.

Amanda Bryan is the acting editor of Australian Hotelier, the leading resource for the Australian pub industry. She is also the curator of this year’s Pub Leaders Summit program. Amanda’s previous roles include Food & Drink Business editor and Australian Financial Review reporter. She has held numerous roles on a variety of consumer, business and industry publications.

Monique is a specialist gaming regulatory and financial crimes compliance consultant. Monique has worked in and with the Queensland gaming regulator and state and territory gaming regulators. She has worked with the Queensland Government and Federal Governments on gaming policy; and has held lead gaming compliance and risk roles in the private sector. Monique assists organisations large and small with simplifying regulation and reducing regulatory complexity to allow you to focus on what you do best. Monique enjoys talking all things gaming policy and AML/CTF, and cracking a good joke along the way.

With over 15 years of experience shaping creative strategy and storytelling for the travel and tourism sector, Nick has helped build global brand communities and fully integrated campaigns for organisations including Visit USA, Virgin Atlantic, Visit Las Vegas and the Croatian National Tourism Board. His approach blends data-driven insight with emotive narrative, ensuring strategy is always rooted in brand truth and purpose, before being translated into relevant, scalable creative that performs across channels and platforms.
