The Sin Gusano Project
"Terroir over Agave Variety"
Over the past decade, Jon has spent much of his time traveling across Mexico, exploring remote regions in search of exceptional agave spirits while building a deeper understanding of their production and the communities behind them. The public-facing result of this journey is The Sin Gusano Project, which bottles some of the remarkable spirits he discovers along the way. This includes both an on-trade label, Sin Gusano, and a direct-to-consumer subscription, the Mezcal Appreciation Society. Most recently, Jon has been spending increased time in the UK following the opening of Sorbito in Stoke Newington - a hybrid tasting room, bar, and shop that marks the latest extension of The Sin Gusano Project.
